Lemon Drops


Here is an awesome lemon drop Jell-O shot that is a fan favourite. The recipe is so easy and sets quickly so they are easy for everyone to try out. For these ones in particular I used 3/4 cup plain vodka and 1/4 cup Lemoncello because I didn't have enough Vodka, but you can just use vodka for a stronger shot.



Lemon Drop

3               lemons
1 cup        water
1 pkg        lemon Jell-O
1/2 pkg    Knox gelatin
1 cup       Vodka (try Smirnoff Citrus)

First, cut the lemons in half lengthwise. Use a knife to hollow each half, making sure to get all the lemon guts out (and trying not to puncture it). They should resemble this:

Heat 1 cup water and 1/2 pkg of Knox gelatin in a saucepan over medium-low heat. Continuously stir it until the gelatin is completely dissolved and it is almost at boiling point. Add the lemon Jell-O and stir until dissolved. Remove from heat and add Vodka.

For easy pouring, pour the mixture into a measuring cup. Put the lemon halves in a cake pan or large muffin pan so they can't move or tip over. Pour the mixture into the lemon halves, ensuring they are all full. Gently place in refrigerator. Let set for at least 3 hours.

To cut: use the sharpest knife you can find. turn the lemon half over onto a plate. Each half should cut into 3-4 slices, depending on how thick you want them.
