Strawberries 'n' Cream
I started making this recipe hoping they would turn out tasting like Strawberry Shortcake, but the vanilla is so strong that all I can think of is strawberries and cream... and they are so good! I used a heavy cream in the first layer but I think melted vanilla ice cream would be so much better, and tastier (if you do use the ice cream, omit the Vanilla extract to avoid the vanilla overpowering the strawberry flavour).
Recipe:
Cream Layer:
1 cup water
2 pkgs Knoxx gelatin
1/2 cup 18% cream
1/2 cup Vanilla Vodka
1 tsp Vanilla extract
Strawberry Layer:
1 cup water
1/2 pkg Knoxx gelatin
1 pkg Strawberry Jell-O
1/2 cup Amaretto
1/2 cup water
1 can Whipped Cream
Heat water in a pot over medium-low with 2 gelatin pkgs. Stir continuously until the gelatin is completely dissolved. Remove from heat and add vodka, cream, and vanilla. Mix well and add to pan. Place in refrigerator for at least 2 hours (or until firm).
Bring your pot back to the stove and heat water and gelatin over medium-low. When gelatin is dissolved, add the strawberry Jell-O. Stir until dissolved. Remove from heat and add Amaretto and water. Let sit for 5-10 minutes, until cooled slightly. Pour over a spatula, into the pan with the cream layer (so it is evenly distributed in the pan). Place in refrigerator and cool until they are set (4 hours, best overnight).
Cut the Jell-O into squares, and use the whipped cream to top each square.
