Watermelon Slices
As promised, back when I did the Lemon Drops, here is my attempt at watermelon jellies! These Jell-O shots look and taste delicious. Try out different types of alcohol with these. I made mine with regular vodka and a splash of melon liqueur, but I would suggest Smirnoff Watermelon vodka or Marie Brizard Watermelon Liqueur.
Watermelon Jellies
8-10 Limes
1 pkg Watermelon Jell-O
1 cup Water
1 pkg Knox Gelatin
1 cup Vodka (or your preferred alcohol)
First, give each lime a gentle squeeze. Cut the limes in half lengthwise. Use a sharp knife to cut around the edge of lime (do not pierce through the rind). Use a spoon, fork, or your fingers to remove the lime guts (making sure to get most of it out). If your limes have thick rinds, you can turn them inside out to make it easier. Set aside.
In a pot, over medium-low heat, heat water and gelatin. Stir until completely dissolved. Add the watermelon Jell-O and stir until dissolved. Remove pot from heat, and stir in Vodka.
Place lime halves in mini-muffin pans (if available), or in a regular pan, but make sure they are placed in a way so they don't tip over. I used the caps off of water bottles to balance the lime halves on. Once placed, spoon the Jell-O mixture into each half. Make sure each half is full. Place in refrigerator for 2 or more hours.
To Cut:
Use a very sharp knife. Turn them Jell-O side down, and slice each in half.
