Margariiiiita!!!

I've been MIA with my jellies lately, but here's one that won't disappoint. I thought I would celebrate my birthday with a jelly inspired by one of my favorite frozen cocktails!


Recipe:

2 pkgs      Knox Gelatin
3/4 cup     Limeade concentrate (from frozen - thawed)
1/4 cup     Water
3/4 cup     Gold Tequila
1/4 cup     Triple Sec

Heat limeade and water with gelatin in a saucepan over medium heat. Continuously stir until the gelatin dissolves. When mixture is almost at boiling point (test by dipping a spoon and touching the liquid - be careful) remove from heat and add tequila and triple sec (as desired - add less or more depending on your preference, use water for rest of 1/4 cup).

Pour jelly mixture into a loaf pan, 8x8 baking dish, or molds. Place in refrigerator for at least 4 hours (best overnight). When ready to serve, cut into squares and place on serving dish or use mini chocolate wrappers (found in baking aisles - I get mine at the bulk barn).

Note: In the photo I sprinkled sea salt over the jellies, but I don't recommend eating them with the salt on them. You can, however, drizzle some lime juice over them. Enjoy!

Also Note: Your jellies will be greener than mine - I didn't have any limeade concentrate so I used lemonade. You can also make strawberry, mango, or whatever margarita you prefer!
