Orange Jell-O Cupcake


It's not a shot, alcoholic, or a jelly - but it does have Jell-O in it so I thought I'd share this recipe! This fresh citrus cupcake is easy to make and won't disappoint your taste buds.


Recipe:

Cupcake

2 cups            All Purpose Flour
1 1/2 cups      Sugar
2 1/2 tsp         Baking Powder
1 tsp               Salt
1/2 cup           Butter, very soft
3/4 cup           Milk
2                     Eggs, at room temperature
1 tbsp             Vanilla extract
1 pkg              Orange Jell-O
1 cup              Boiling Water

Preheat the oven to 350 F. In a large bowl mix together flour, sugar, baking powder and salt. Mix in the butter. Add the milk, eggs, and vanilla. Mix until just combined and scrap down the sides. Line a cupcake baking sheet with baking cups. Fill each cup half way with batter. Bake for 20 minutes, or until knife inserted comes out clean.

Take cupcakes out of oven, and poke each cupcake with a fork 3 or 4 times. Let sit.

Add boiling water to package of Orange Jell-O in a small bowl. Stir until Jell-O is dissolved. Gently, pour 1 tablespoon of Jell-O over each cupcake. Place cupcakes in refrigerator for at least 2 hours, best overnight.

Icing

3 tbsp         Butter
3 cups         Icing Sugar
4 tbsp         Orange Juice

Cream butter. Add sugar, slowly, 1 cup at a time. Add one or two tablespoons of orange juice to your preferred consistency.  Add more icing sugar if icing is not thick enough. Add two drops of red food colouring and 15 drops of yellow. Stir to mix colour. Add icing to a plastic bag. Take the cupcakes out of the refrigerator. Cut a slit in the bottom corner of the plastic bag and circle the icing around each cupcake. Top with an orange slice.
