Pineapple Bites


After I made my Watermelon Jellies I had some spiked watermelon Jell-O left over, so I paired it with another tropical flavor. Pineapple has such a strong taste, so I knew it would mask any alcohol I added to the recipe; so go ahead and makes these strong!

Pineapple Bites

1 cup    Water
1 pkg    Knox Gelatin
1 pkg    Pineapple Jell-O
1 cup    Vodka (plain or try a another bold flavor like Mango or Orange)
Dash of Triple Sec

Heat 1 cup water over medium-low heat in a pot with the Knox gelatin, stir constantly. Once it is dissolved, add the pineapple Jell-O and stir until dissolved. Remove from heat and stir in the Vodka and a dash of triple sec. Pour into a pan or moulds.

I poured my extra Watermelon Jell-O into a pan, and let sit for a few hours. Once my pineapple jellies were set, I cut them into cubes and cut a small cube of the watermelon Jell-O to place on top. I served these in colorful chocolate papers (you can find these in pretty much any baking department).

Remember, if you find the jelly is sticking to the bottom of the dish, you can dip the pan/baking dish in a sink of hot water, for no more than 5 seconds to loosen the jelly at the bottom of the pan, but don't keep it in the water for too long or you will melt the jelly!
